Peanut Ginger Dish

Ingredients:

  • batsmani rice
  • bok choy, shredded
  • ginger, diced
  • snow peas
  • green onions
  • red pepper flakes
  • Sauce- ginger marinade and 1 spoonful of peanut butter, thin w/ olive oil
  • 2 hardboiled eggs

Saute vegetables with olive oil. Place veggies over rice, add sauce and chopped egg. Chopped peanuts may be nice on top. Might try serving with pork spring rolls and jujube tea.

  2. becky is on board for this one, but i am skeptical. not a big fan of snow peas. she is an asian fetishist when it comes to food.

  3. jordon, you could replace sliced carrots or edamame for snow peas, just something to change the texture
